Ingredient Substitutions

          For this:
 
1 square (1 oz.) chocolate
1 c (less 2 T) all-purpose flour
2/3 c honey
1 1/2 c corn syrup
2 T flour (for thickening)
1 c sweet milk plus 2 tsp baking powder
1 c sour milk (cream)

1 c tomato juice
1 whole egg, for thickening
1 c catsup or chili sauce
1 T fresh snipped herbs
1 small fresh onion
1 tsp dry mustard
1 clove garlic

 

How Much is How Much?

Meats:
2 c ground meat (tightly packed)
3 c ground meat (loosely packed)
 
Fruits, nuts & vegetables:
1/2 c raisins equals
3 c coarsely chopped nuts
1 lemon (medium)
grated peal of 1 lemon
5 to 8 lemons (medium), squeezed
1 orange (medium)
grated peal of 1 orange
3 to 4 oranges (medium), squeezed
1 apple (medium)
1 onion (medium)

Pastas, etc.:
7 oz spaghetti
4 oz macaroni
4 oz noodles
1 c raw rice

Crumbs:
28 saltine crackers
14 square graham crackers
22 vanilla wafers
1 1/2 slices bread
1 slice bread

Cream, cheese, eggs:
1 c whipping cream
1 lb American cheese
1 lb American cheese
1 lb Cottage cheese
1/4 blue cheese
3 oz cream cheese
8 oz cream cheese
12 to 14 egg yolks
8 to 10 egg whites
4 to 5 whole eggs
1 whole egg

Flour, sugar, etc.:

1 lb graham flour
1 lb brown sugar
1 lb granulated sugar

          You may substitute this:
 
3 T cocoa plus 1 T butter or margarine

1 c sugar plus 1/3 c of water

1 c sour milk plus 1 tsp soda
1 c sweet milk (cream) plus 1 T vinegar or 
lemon juice or 1 3/4 tsp cream of tartar
2 egg yolks
1 tsp dried herbs
1 T dried minced onion, re-hydrated
1 T prepared mustard
1/8 tsp garlic powder
1/2 c tomato sauce plus 1/2 c water
1 c tomato sauce plus 1/2 c sugar and 2 T vinegar
