Ingredients:

Cauliflower florets
shredded sharp cheddar cheese
shredded Monterey jack cheese
package cream cheese
heavy cream
sliced green onions
bacon cooked and crumbled

Procedure:
- Preheat oven to 350° F.
- Steam florets.
- Cream together cream cheese and 6 oz. of each cheese plus heavy cream.
- Stir in bacon, onions and garlic.
- Drain cauliflower, saving some of the liquid, add florets to cheese mixture.
- If you feel the cauliflower seems a little dry, carefully add some of the saved liquid a little at a time. *
- Pour into prepared casserole and top with remaining cheeses.
- Bake covered for 25 minutes.
- Uncover and bake until cheese is brown and bubbly.
Note: I left out the green onions and used prepared packaged bacon bits, adding what looked about right. I also reduced
the amount of cauliflower and put some broccoli in the mix.
* First time I made this, mine was a little watery.
