Olive-Mozzarella Spiral Bruschetta

Ingredients:

garlic powder
(3/8" thick) slices French bread, 6 oz.
(12oz.) BelGioioso Unwrapand-Roll mozzarella
store bought tapenade (olive spread)
tomato, seeded, diced (1/2 cup)
finely chopped red onion
salt
fresh basil leaves
Procedure:
Preheat oven to 350° F.
Combine 1/4 cup oil and garlic powder.
Place bread slices on jellyroll pan; brush tops with oil mixture.
Bake until golden, 10 minutes; cool.
Unroll cheese.
Cut in half crosswise.
Spread each piece with 2 T. tapenade, leaving 1/2" border on short sides.
Starting with one short side of each piece, roll up each piece jellyroll-style.
Cut each roll crosswise into 12 slices.
Toss tomato, onion and salt with remaining oil.
Place 1 basil leaf on each toast; top with mozzarella slice and tomato mixture.
Garnish with extra basil, if desired.
Servings = 24
