Spanish Tortilla Bites

Ingredients:
8 1/2 c 1/2 tsp 1/4 tsp 8
1 T 8 oz 1 2 cans 24 24 |
eggs
sour cream salt pepper shredded Mexican 4-cheese blend olive oil fresh chorizo sausage, casings removed,
crumbled onion, chopped (05oz. each ) sliced potatoes, drained fresh parsley leaves pimento-stuffed olives

Procedure:
- Preheat oven to 350° F.
- Coat 2-qt. (11" x 7") baking dish with cooking spray.
- In large bowl, whisk eggs, sour cream, salt and pepper; stir in cheese.
- In large nonstick skillet, heat oil over medium heat.
- Add sausage and onion; cook, stirring, until browned and onions are softened, 10 minutes.
- Add potatoes; cook, stirring, until lightly browned, 5 minutes.
- Stir sausage mixture into egg mixture.
- Transfer to baking dish.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Cool at least 15 minutes.
- Serve warm or at room temperature, or cover and refrigerate.
- Before serving, run knife around edges to loosen.
- Invert onto cutting board.
- Cut into 24 squares; invert squares.
- Garnish with parsley & olives skewered to individual squares by toothpicks.
