Bruschetta with garlic & tomatoes

Ingredients:
7 or 8 3 2 tsp 2 T Handful
1 baguette 1/4 c |
plum
tomatoes cloves garlic, minced balsamic vinegar extra virgin olive oil basil leaves, chopped Mozzarella
cheese salt and pepper to taste Italian bread, sliced olive oil |
Procedure:
- Slice the baguette, sprinkle with olive oil and toast in the oven until brown.
- Combine tomatoes, garlic, vinegar, oil, basil, salt and pepper in a medium serving bowl.
- Marinate for half and hour.
- Top the toasted bread with the tomato mixture, then some mozzarella.
- Serve immediately or put them under the broiler to melt the cheese some.
- Garnish with some of the fresh basil.
Prep time 10 minutes. Cook time 30 minutes.
Amazing with a glass of red wine! I have to cut it way back, because I am the only one who eats it and I use canned
petite diced tomatoes(drained). I also cut back on the olive oil, it's just too much for me.
