1. Preheat over to 425º.
(This seems a little too hot to me, use your own judgement.)
2. Combine baking
mix and ice cream until smooth. If necessary, add additional ice cream to make mixture creamy.
3. Grease bottoms
of 12 muffin cups, fill three quarters full.
4. Bake for 25 minutes until golden brown.
Flavored ice creams work well, too, strawberry, butter-pecan, probably just about any favorite flavor.
