Cut-up chicken pieces (I'm partial to
legs and thighs) Flour Seasonings to your taste (I like curry powder, or Italian herbs and Parmesan cheese) Oil
to coat cookie sheet
Procedure:
Heat oven to 400° F.
Coat cookie sheet with oil, place in oven to heat.
Mix flour and seasonings in plastic bag.
Rinse chicken pieces but do not dry.
Two or three at a time, place chicken pieces in bag and shake to coat.
When oven is heated, place chicken skin-side down on cookie sheet and bake for 25 minutes.
Turn pieces and bake until skin is crisp and brown.
This is my favorite way to cook chicken. It’s also
delicious if you skip the seasoned flour and use Italian bread crumbs for the coating.
