1.  In a small dry skillet over medium heat, toast the almonds to bring out their flavor. 
2.  Remove from
                                             heat. 
3.  Cool. 
4.  Combine figs, cocoa, cinnamon and almonds in a food processor and pulse just until they
                                             become the size of peppercorns. 
5.  Add honey, orange zest and extract. 
6.  Pulse 3 or 4 times more or just
                                             until mixed in. 
7.  Spread the sugar in a shallow dish. 
8.  Form the dough into 1-inch balls.

                                             Roll in sugar.
