Mexican Meat Balls

Ingredients:

onion, finely chopped
green pepper, finely chopped
Taco seasoning mix
Tortilla chips, crushed fine
eggs, beaten
milk
Tobasco sauce
lean ground beef
fresh ground pork (not sausage!)
chorizo (casings removed)
Procedure:

1.  Preheat oven to 365ºF.
2.  Mix the onion, green pepper, taco seasoning mix and crushed tortilla chips.
3.  Combine the egg, milk and Tobasco sauce.
4.  Add it to the spice mixture and mix well.
5.  Break all three meats into small pieces.
6.  Add to previous mixture and mix well, using hands.
7.  If it seems a little dry add more milk.
8.  Shape into small (1") meatballs and place on baking sheet.
9.  Bake for about 15 minutes.

Sauce:
1.  Mix ingredients together in a large pan.
2.  Heat to a slow boil.
3.  Reduce to a simmer.
4.  As the meatballs finish cooking add them to the sauce in the pan.
5.  After all of the meatballs have been added to the sauce, continue to simmer for at least one hour.

Serve immediately or refrigerate to reheat at later time for serving.
