Meat & Potatoes with Peanut Sauce

Ingredients:

beef, cubed
A little olive oil
large onion, diced
cloves garlic, diced finely or crushed
large tomato, diced
tomato paste (optional)
salt/pepper to taste
crunchy peanut butter
mild banana pepper, diced
peas (may be frozen)
 
carrot sticks (may be frozen)
beef stock
a little squirt of vinegar (optional)
potatoes, cooked and quartered
Procedure:

1.  Fry diced beef in oil, all sides.
2.  Add onions, garlic, tomato, salt/pepper; banana pepper, sauté.
3.  Add tomato paste.
4.  Simmer 10 minutes.
5.  Add peanut butter, peas/carrots.
6.  Add beef stock, simmer a couple of minutes or until carrots/peas are cooked.
Squirt a little vinegar if you want before serving.

Serve with potatoes and or rice.

We Peruvians love rice and eat this with both! Enjoy! Looks complicated but it is easy and yummy!

You can also use chicken instead of beef, you would fry the chicken, then simmer till cooked. Delicious too.
