Easy Oven Omelet

bulk pork sausage, cooked and drained
butter or margarine
eggs
sour cream
milk
salt
dried basil leaves
(8oz) shredded cheddar cheese
(4oz) mushroom stems and pieces
green onions (1/4c), thinly sliced
(2 oz) pimiento, drained
Procedure:
 
1.  Preheat oven to 325ºF.
2.  Heat butter/margarine in a 13" x 9" baking dish, in the oven until melted.
3.  Tilt dish to evenly coat bottom (I spray mine with Pam before melting butter)
4.  Beat eggs, sour cream, milk, salt and basil in large bowl until blended.
5.  Stir in pork, cheese, mushrooms, green onions and pimiento.
6.  Pour into the prepared baking dish.
7.  Cook uncovered for 40-45 minutes or until set but still moist (knife inserted in middle comes out clean).
8.  Cut into squares.

Do ahead tip. Prepare and pour into baking dish. Cover and refrigerate no longer than 24 hours. Cook uncovered for 50-55 minutes or until knife comes out clean.

I make this for breakfast every Christmas. Serve with fresh winter fruit salad and fancy bread or scones of some sort, coffee or hot chocolate. It has become tradition and is easy, I make it the day before and pop into oven as I am getting salad ready, setting table etc.
