Confetti Egg Bake

Ingredients:

bulk turkey mild Italian Sausage (or regular sausage)
(2oz) shredded cheddar cheese
(10oz) frozen chopped spinach thawed & squeezed to drain
sliced fresh mushrooms
(I use pre-cooked sliced potatoes)
chopped green onions
2oz jar sliced or diced pimentos drained
eggs
half & half
(2oz) shredded Swiss cheese
paprika
Procedure:
 
1.  Preheat oven to 350ºF.
2.  Spray an 8" or 9" square 2 qt baking dish with non-stick cooking spray.
3.  In a medium skillet cook sausage until no longer pink & drain.
4.  Layer Cheddar cheese, spinach, sausage, mushrooms, onions & pimento in baking dish.
5.  In a medium bowl, combine eggs, and half & half, blend well.
6.  Pour over layered mixture.
7.  Sprinkle with Swiss cheese and paprika.**
8.  Bake for 30-40 minutes or until a knife inserted in middle comes out clean.
9.  Let stand 5 minutes before serving.

** To make ahead prepare as directed to this point. Cover & refrigerate up to 1 day before baking.
