The Ladybugs' Recipes

Loaded Cauliflower Casserole

Ingredients:
2 lbs

6 slices
Cauliflower florets
shredded sharp cheddar cheese
shredded Monterey jack cheese
package cream cheese
heavy cream
sliced green onions
bacon cooked and crumbled

Procedure:
  1. Preheat oven to 350° F.
  2. Steam florets.
  3. Cream together cream cheese and 6 oz. of each cheese plus heavy cream.
  4. Stir in bacon, onions and garlic.
  5. Drain cauliflower, saving some of the liquid, add florets to cheese mixture.
  6. If you feel the cauliflower seems a little dry, carefully add some of the saved liquid a little at a time. *
  7. Pour into prepared casserole and top with remaining cheeses.
  8. Bake covered for 25 minutes.
  9. Uncover and bake until cheese is brown and bubbly.

Note: I left out the green onions and used prepared packaged bacon bits, adding what looked about right. I also reduced the amount of cauliflower and put some broccoli in the mix.
* First time I made this, mine was a little watery.
