Key West Chicken Marinade

Ingredients:

soy sauce
honey
vegetable oil
lime juice
chopped garlic
skinless, boneless chicken breast halves **
Procedure:
  1. In a shallow container, blend soy sauce, honey, vegetable oil, lime juice, and garlic.
  2. Place chicken breast halves into the mixture, and turn to coat.
  3. Cover, and marinate in the refrigerator at least 30 minutes.
  4. Preheat an outdoor grill for high heat.
  5. Lightly oil the grill grate.
  6. Discard marinade, and grill chicken 6 to 8 minutes on each side, until juices run clear.
**The recipe says to use whole chicken breasts but I used it on chicken chunks, which I threaded onto skewers with fresh pineapple chunks, Vidalia onion chunks, and green pepper chunks. I also marinated the chicken for about 6 hours instead of 30 minutes. Very nice flavor!
