Steamed Cabbage & Onions

Ingredients:

large onion
head of cabbage
T oil
Procedure:
  1. Slice the onion and cabbage into 1/4" strips.
  2. Pour oil into a deep pot (I use the Dutch Oven) and heat over medium/low heat (too hot or the onions will scorch & be bitter).
  3. Saute onions first, until they begin to turn translucent.
  4. Add sliced cabbage, toss with onions & oil, cover snuggly.
  5. Turn down heat & let the mess steam for 10 minutes or until cabbage has softened to tender crisp. I stir mine up with tongs 1/2 way through so it cooks evenly.
  6. Salt & pepper to taste and serve.
