Shrimp and Artichoke Soup

Ingredients:
24 oz
1 qt

1/4 c + 1 T
1/4 c
1 qt
1 lb
1 T
quartered artichokes, drained (I only used one can/14 oz can)
strong chicken stock
chopped green onions (1 c goes in the soup & 1 c is used for garnish)
thyme leaves (the cooking instructor used dried, but I used fresh. Either will do.)
Salt and Joe's Stuff seasoning, to taste
flour
melted butter
heavy cream
shrimp, medium size, peeled and de-veined
chopped parsley (for garnish)
Procedure:
  1. Combine artichoke, chicken stock, green onions, salt, Joe's Stuff seasoning and thyme and bring to a boil.
  2. Reduce to simmer and cook for about 12 minutes.
  3. Combine butter and flour to make a light roux and add to simmering pot.
  4. Stir in heavy cream and simmer for 10 minutes, stirring often.
  5. Add shrimp and simmer for 5 more minutes.
  6. Serve with parsley and more chopped green onions.
Makes 6-8 servings.
