Cream Scones w/ Dried Fruit

Ingredients:
2 c
3 T
2 tsp
1/2 tsp
1/2 c
1 1/3 c

all-purpose flour
sugar
baking powder
salt
currants or other dried fruit
heavy cream
milk or melted butter to brush on tops
sugar
Procedure:
  1. Preheat oven to 400.
  2. Prepare baking sheet with parchment paper or cooking spray.
  3. Whisk flour, sugar, baking powder and salt together.
  4. Stir in dried fruit.
  5. Make a well in the center of dry ingredients and pour in cream.
  6. Stir until everything is moistened and a soft dough is formed.
  7. Depending on humidity, you might need to add a touch more cream.
  8. Scrape dough onto a floured surface and knead a few times, shaping the dough into a log about 8 inches long.
  9. Cut the log in two and shape each half into a smooth disk about 1 inch thick.
  10. Cut each disk into 4 pieces.
  11. Arrange the 8 scones on the baking, brush with milk or butter, sprinkle with sugar.
  12. Bake for about 7 minutes, then reduce heat to 350 and bake another 15 minutes.

Some additions suggested:
    Savory: skip sugar and add some crumbled cooked bacon, about 1/4 c. shredded cheddar cheese
    Sweet: Dark chocolate chips with poppy seeds
        Apricot, crystallized ginger and some lemon zest
        Cinnamon, chopped almonds and dried cherry
        Craisins coconut and white chocolate
