Cheesecake Pie

Ingredients:

prepared crumb crust, your favorite, graham cracker, shortbread, even chocolate
(3.4 oz) cheesecake flavor instant pudding
(3.3 oz) white chocolate instant pudding mix
cold milk
almond extract
(8 oz) Coolwhip, thawed and divided
sliced toasted almonds....optional, tastes fine without
Procedure:

Combine pudding mixes with milk, almond extract and half of thawed whipped topping.

Instructions say beat with wire whisk for 1 minute, but I think the last time I made it, I used my electric mixer on low and beat for 1 minute. Mixture will be thick.

If you use toasted almonds, spread half of them on the bottom of the crust, top with pudding mixture, then put on remaining topping, sprinkle with remaining almonds. I going to top my pie with some white chocolate shavings instead of using any almonds.

Also, if I happen to have some on hand, I may whip in 4 oz. of cream cheese for added cheesecakey flavor.
