Sweet 'n Spicy Wing Drumettes

Ingredients:

limes
apricot preserves, melted
dry Caribbean jerk seasoning
grated peeled fresh ginger
salt
chicken wings, about 16, cut in half, tips removed
Procedure:
  1. Preheat oven to 425° F
  2. Line jellyroll pan with foil; coat with cooking spray.
  3. Grate 1 tsp. zest and squeeze 2 Tbs. juice from limes; reserve separately.
  4. In large bowl, combine 2 Tbs. apricot preserves, jerk seasoning, lime juice, ginger and salt.
  5. Add wings; toss until coated.
  6. Arrange wings in single layer on pan.
  7. Bake 20 minutes.
  8. Meanwhile, stir lime zest into remaining apricot preserves.
  9. Brush over wings.
  10. Bake until golden and no longer pink near bones, about 5 minutes.
