Olive-Mozzarella Spiral Bruschetta

Ingredients:

garlic powder
(3/8" thick) slices French bread, 6 oz.
(12oz.) BelGioioso Unwrapand-Roll mozzarella
store bought tapenade (olive spread)
tomato, seeded, diced (1/2 cup)
finely chopped red onion
salt
fresh basil leaves
Procedure:
  1. Preheat oven to 350° F.
  2. Combine 1/4 cup oil and garlic powder.
  3. Place bread slices on jellyroll pan; brush tops with oil mixture.
  4. Bake until golden, 10 minutes; cool.
  5. Unroll cheese.
  6. Cut in half crosswise.
  7. Spread each piece with 2 T. tapenade, leaving 1/2" border on short sides.
  8. Starting with one short side of each piece, roll up each piece jellyroll-style.
  9. Cut each roll crosswise into 12 slices.
  10. Toss tomato, onion and salt with remaining oil.
  11. Place 1 basil leaf on each toast; top with mozzarella slice and tomato mixture.
  12. Garnish with extra basil, if desired.
