Spanish Tortilla Bites

shredded Mexican 4-cheese blend
olive oil
fresh chorizo sausage, casings removed, crumbled
onion, chopped
(05oz. each ) sliced potatoes, drained
fresh parsley leaves
pimento-stuffed olives
Procedure:
  1. Preheat oven to 350° F.
  2. Coat 2-qt. (11" x 7") baking dish with cooking spray.
  3. In large bowl, whisk eggs, sour cream, salt and pepper; stir in cheese.
  4. In large nonstick skillet, heat oil over medium heat.
  5. Add sausage and onion; cook, stirring, until browned and onions are softened, 10 minutes.
  6. Add potatoes; cook, stirring, until lightly browned, 5 minutes.
  7. Stir sausage mixture into egg mixture.
  8. Transfer to baking dish.
  9. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  10. Cool at least 15 minutes.
  11. Serve warm or at room temperature, or cover and refrigerate.
  12. Before serving, run knife around edges to loosen.
  13. Invert onto cutting board.
  14. Cut into 24 squares; invert squares.
  15. Garnish with parsley & olives skewered to individual squares by toothpicks.
