Impossible Brunch Pie

Ingredients:
8 - 10 oz

of your favorite veggie (broccoli, asparagus, carrots) cooked and drained
sour cream*
small curd cottage cheese*
Bisquick baking mix *
margarine, melted
eggs
tomato, peeled and thinly sliced
freshly shredded Parmesan cheese
* to make this recipe ‘diet friendly’ you can use the lite versions of these.

Procedure:
  1. Preheat oven to 350ºF.
  2. Spread veggies into 9” pie plate coated with cooking spray.
  3. Beat sour cream, cottage cheese, baking mix, melted margarine and eggs until smooth.
  4. Pour into baking dish.
  5. Top with tomato slices and sprinkle with Parmesan cheese.
  6. Bake until a knife inserted between the center and the edge comes out clean, about 30 minutes.
  7. Cool 5 minutes before serving.
