Spinach Rice Casserole

Ingredients:
1 pkg

(10oz) package frozen spinach, cooked, drained, and cooled
cooked rice
Cheddar cheese, grated (save some for top of casserole)
melted butter or margarine
onion flakes
eggs
milk
Worcestershire sauce
salt, if desired

Procedure:
  1. Preheat oven to 350° F.
  2. In a large bowl, combine spinach, rice, cheese, butter and onion flakes.
  3. In another bowl, mix eggs, milk, Worcestershire sauce and salt.
  4. Add to rice mixture and mix well.
  5. Put in a greased 2-quart baking dish.
  6. Bake for 35 to 40 minutes or until middle of casserole is cooked.
  7. Add leftover cheese for last ten minutes.

I cook the rice and spinach and get the cheese grated the day before so that all I have to do is put it together and bake it.

Tips that I haven't tried - using fress spinach or adding a dash of Cajun seasoning to give it a kick.
