Bruschetta with garlic & tomatoes

Ingredients:

1 baguette
1/4 c
plum tomatoes
cloves garlic, minced
balsamic vinegar
extra virgin olive oil
basil leaves, chopped
Mozzarella cheese
salt and pepper to taste
Italian bread, sliced
olive oil
Procedure:
  1. Slice the baguette, sprinkle with olive oil and toast in the oven until brown.
  2. Combine tomatoes, garlic, vinegar, oil, basil, salt and pepper in a medium serving bowl.
  3. Marinate for half and hour.
  4. Top the toasted bread with the tomato mixture, then some mozzarella.
  5. Serve immediately or put them under the broiler to melt the cheese some.
  6. Garnish with some of the fresh basil.
Prep time 10 minutes.
Cook time 30 minutes.

Amazing with a glass of red wine!
I have to cut it way back, because I am the only one who eats it and I use canned petite diced tomatoes(drained). I also cut back on the olive oil, it's just too much for me.
