Rich Seafood Casserole

Ingredients:
1 1/2 lb

unpeeled large fresh shrimp
dry white wine
chopped onion
fresh parsley or celery leaves
butter or margarine
salt
bay scallops
butter or margarine
all purpose flour
half and half
( 2 oz.) shredded Swiss cheese
lemon juice
lemon-pepper seasoning
(7 oz) sliced mushrooms, drained
soft whole wheat breadcrumbs
grated Parmesan cheese
sliced almonds
butter or margarine, melted
hot cooked rice

Procedure:
  1. Preheat oven to 350° F.
  2. Peel and, if desired, devein shrimp and set aside.
  3. Combine wine and next 4 ingredients in a Dutch oven.
  4. Bring to a boil.
  5. dd shrimp and scallops.
  6. Cook 3-5 minutes or until shrimp turn pink.
  7. Drain shrimp, reserving 2/3 c of the broth.
     
  8. Melt 3 T butter or margarine in Dutch oven, over low heat.
  9. Add flour, stirring until smooth.
  10. Cook, stirring constantly, one minute.
  11. Gradually add half and half.
  12. Cook over medium heat, stirring constantly until mixture is thickened and bubbly.
  13. Add cheese, stirring until cheese melts.
  14. Gradually stir in reserved 2/3 c broth, lemon juice, and lemon pepper seasoning.
  15. Stir in shrimp mixture and mushrooms, and mix well.
  16. Spoon mixture into a lightly greased 11" x 7" baking dish.*
  17. Cover with foil and bake for 40 minutes.
  18. Remove from oven and remove foil.
     
  19. Combine breadcrumbs and next 3 ingredients.
  20. Sprinkle over casserole.
  21. Return to oven and bake uncovered for 10 minutes.
  22. Let stand for 10 minutes before serving.
  23. Serve over rice.

Yields: 8 servings.

* I use 13" x 9" and it works fine.    If desired, you can cover and chill overnight, then let sit at room temp. for 30 minutes before baking.

This is a recipe from Christmas with Southern Living, 1999 and as it’s name implies, it really is “rich”! It looks complicated, but really isn't THAT involved, and it is sooo worth the effort! Serve over rice or pasta.....
