South-of-the-Border Meatloaf

Ingredients:

finely chopped poblano (or green bell) pepper
medium onion finely chopped
very finely crushed tortilla chips
ketchup
chipotle "rub" (I'm substituting 1T canned Chipotle pepper)
lbs lean ground beef (85/15)
egg
shredded sharp cheddar cheese, divided
chopped fresh cilantro (optional)

Procedure:
  1. Preheat oven to 375ºF.
  2. Combine ingredients reserving 1/2 of the cheese and 1/4 cup of the ketchup to top the loaf.
  3. Bake for 30 minutes in the muffin tin.
  4. The cilantro is to be sprinkled on top according to the recipe, but I'll be mixing mine in like parsley.

The recipe is for microwave in P.C.'s "deep covered baker".
14 - 17 minutes on high.

The Pampered Chef recipe tips for conventional oven baking are 400 for 65-70 minutes. Brush w/ ketchup 15 minutes before end of bake time and then sprinkle w/ reserved cheese to melt as meatloaf sets and cools.
