Chicken Corn Casserole

Ingredients:
2 1/2 c
1 can
1 can
1/2 c
1/4 c

cooked, diced chicken (chilled or frozen)
(11-oz) Southwestern- or Mexican-style corn (undrained)
(10-oz) mild diced tomatoes and green chiles (undrained)
corn muffin mix
light sour cream
light mayonnaise
shredded reduced-fat sharp Cheddar cheese
cooking spray
Procedure:

  1. Preheat oven to 425°F.
  2. Coat 2-quart baking dish with cooking spray.
  3. Combine all ingredients (except cheese) in medium bowl.
  4. Transfer mixture to baking dish.
  5. Bake 15 minutes.
  6. Remove from oven, sprinkle cheese over top; bake 5 more minutes or until cheese melts.
  7. For best results, let stand 5 minutes before serving.
I served it with tortilla chips and a salad...simple meal and oh so good!
