Summer Bruschetta

Ingredients:

1/2 - 3/4 c

bakery baguette
large basil leaves
fresh, shredded mozzarella cheese
diced tomatoes
extra-virgin olive oil
basil pesto (I use store-bought but you can easily make your own)
diced pimentos
Procedure:
  1. Cut bread in half lengthwise, using a serrated knife.
  2. Set aside.
  3. Stack basil leaves and slice into thin strips.
  4. Set aside.
  5. Combine the following ingredients in a bowl....
    ...tomatoes, olive oil, pesto, and pimentos....
  6. Set aside.
  7. Toast bread halves for a few minutes, then remove from oven.
  8. On top of the bread halves, spread the tomato mixture, then sprinkle with the shredded mozzarella.cheese.
  9. Return to the oven but only for a minute or so, or until the cheese begins to melt.
  10. Take out of oven and sprinkle with the sliced basil leaves.
  11. Then slice (on a diagonal) the bread halves in 1-inch pieces and SERVE!
