baguette large basil leaves fresh, shredded mozzarella cheese diced tomatoes extra-virgin olive oil basil
pesto (I use store-bought but you can easily make your own) diced pimentos
Procedure:
Cut bread in half lengthwise, using a serrated knife.
Set aside.
Stack basil leaves and slice into thin strips.
Set aside.
Combine the following ingredients in a bowl.... ...tomatoes, olive oil, pesto, and pimentos....
Set aside.
Toast bread halves for a few minutes, then remove from oven.
On top of the bread halves, spread the tomato mixture, then sprinkle with the shredded mozzarella.cheese.
Return to the oven but only for a minute or so, or until the cheese begins to melt.
Take out of oven and sprinkle with the sliced basil leaves.
Then slice (on a diagonal) the bread halves in 1-inch pieces and SERVE!
