Fruit Cordials

Ingredients:
  Berries....
    Red raspberry
    Black raspberry
    Strawberry
    Red cherry
    Black cherry

Berries:
2-3 qt
2c
1qt
berries
sugar
light rum (or vodka)
Plum:
7c
2 c
1qt
prune plum, halved & pitted (3 lb)
sugar
light rum (or vodka)
Peach:
3lb
2 1/2 c
4 strips
4 sticks

1 qt
peaches, pitted & quartered
sugar
lemon peal (2" x 1/4")
cinnamon
whole cloves
bourbon (or unflavored brandy)
Procedure:
  1. Place all ingredients (for each cordial) in a one gallon glass jar (sealable).
  2. Put on lid.
  3. Turn or shake lightly daily until the sugar is completely dissolved. (about 4 days)
  4. Store in cool dark place for 2 months.
  5. Strain through cheesecloth.
  6. Pour into fancy glass, sealable container.

Use fruit over ice cream or Angel food, sponge, or pound cake!

I prefer using the light rum in the berry and plum cordials...my friend liked to use vodka (I don't like the bite of vodka or gin) --- actually he use to make his cordials with 100 proof stuff!!! You do not need to buy expensive booze...the fruit makes even an inexpensive one taste great!
