Thin Mint Cookies

Ingredients:
1 bag
1 box
chocolate mint patties for candy making. *
Ritz crackers - regular or low fat.
Procedure:
  1. Melt the mints according to bag directions.
       (I did mine in the microwave and it was fine.)
  2. Dip and turn crackers into melted chocolate. **
  3. Pick up coated cracker by edge with a tweezer or 2 forks.
  4. Place on waxed paper to dry.
  5. When shine is gone, they are ready.

*NOT from the grocery store, I get them in the candy/cake decorating section at Hobby Lobby or Michaels. Buy 2 bags and make a double batch, because a lot will get eaten as soon as they are done - LOL.

It took me 30 minutes to make 2 batches. After 20 minutes they were ready to pack.

To make a fancy presentation:

  1. Lay out on a pretty tray or mirror tile to make a circle.
  2. Make sure they are all touching.
  3. Add cookies for the next layer, offset from previous layer, each layer is smaller than the previous one - you are making a Christmas tree.
  4. When complete, surround with balls, bows or whatever.
