Lemon Cheese

Ingredients:

1 c
lemons....juice and grated rind
egg yolks
butter
sugar
Procedure:
  1. Thoroughly combine all ingredients.
  2. Cook in top of double boiler or in a heavy saucepan being very careful of too high a heat.
  3. Cook until the mixture is "as thick as a sponge"...that's a pudding type consistency - stirring constantly.
This will also thicken more as it cools.
