Swinging Granny Beer Cake

Ingredients:

Cake:

1 1/4 c
1 1/2 c
1/2 c
1 tsp
sugar
shortening
eggs
salt
soda
nutmeg
cloves
cinnamon
flour
(12oz) beer
mashed bananas
chopped dates (optional)
nuts (optional)
vanilla
Icing:
1 stick
1 pkg
1 1/2 c
1/2 box
1 tsp
butter or oleo
(3oz) cream cheese
nuts (optional)
powdered sugar
vanilla

Procedure:

Cake:

  1. Preheat oven to 350° F.
  2. Cream together sugar, shortening and eggs.
  3. Stir salt, soda, nutmet, cloves, cinnamon and flour together in a separate bowl.
  4. Add beer, bananas, dates, nuts and vanilla to creamed mixture.
  5. Add dry ingredients last and mix well.
  6. Pour batter into a greased and floured cake pan.
  7. Bake for about 45 minutes. Test to be sure it's done.
       Depending on the type of beer you use, it may need to bake up to 1 hour.
  8. Cool.
Icing:
  1. Mix all ingredients together for the icing.
  2. Spread over the cake after it has cooled.
