Zippy Chicken Mushroom Soup

Ingredients:
1/2 lb

fresh mushrooms, chopped
onion, chopped
celery, chopped
carrot, chopped
butter
all purpose flour
chicken broth
pepper
dried thyme
hot pepper sauce
half and half cream
cubed cooked chicken
minced fresh parsley
lemon juice
salt
Procedure:
  1. In Dutch oven, saute the mushrooms, onions, celery and carrot in butter until tender.
  2. Stir in flour until blended.
  3. Add broth and seasonings; mix well.
  4. Bring to a boil.
  5. Reduce heat and simmer, uncovered, for 10 minutes.
  6. Stir in the cream, chicken, parsley, lemon juice and salt.
  7. Heat through (do not boil)
Yield:11 servings.
