Weight Watchers Veggie Soup

Ingredients:
1 1/3 c
1 c
4 cloves
6 c
3 c
1 c
2 T
1 tsp
1/2 tsp
1/2 tsp
1 c
carrots
onion
garlic
vegetable or chicken broth (fat-free)
chopped cabbage
green beans (I use either fresh or frozen)
tomato paste
dried basil
oregano
salt
zucchini
Procedures
  1. This is doubled.
  2. Spray your soup pot with Pam or other cooking spray.
  3. Slice the carrots, onion and garlic and add to the pot.
  4. Saute for 5 minutes, stirring occasionally.
  5. After five minutes, add the rest of the ingredients EXCEPT the zucchini.
  6. Stir, bring almost to a boil, and then simmer, covered, for 15 minutes.
  7. Then add the zucchini and cook until tender.

This reheats well.
