Stuffed Acorn Squash

Ingredients:

acorn squash (1 to 1 1/2 lbs each)
large, tart red apple, diced
chopped nuts
packed brown sugar
butter or margarine, melted
Procedure:
  1. Preheat oven to 350° F (175° C).
  2. Cut each squash in half lengthwise.
  3. Remove the seeds and fibers.
  4. Place the squash with the cut side up in an ungreased pan.
  5. Bake for 30 minutes.
  6. In a small mixing bowl, combine the apple, nuts, brown sugar and melted butter.
  7. Spoon this mixture into the squash halves.
  8. Return the squash to the oven and continue baking for 30 minutes longer - or until the squash is tender.
