Broccoli & Cauliflower Au Gratin

Ingredients:

coarsely chopped fresh broccoli florets
coarsely chopped fresh cauliflower florets
fresh whole-wheat breadcrumbs
olive oil
paprika
salt
pepper
small garlic cloves, minced
all-purpose flour
skim milk
(4oz) shredded reduced-fat sharp Cheddar cheese
Cooking spray
Procedure:
  1. Preheat oven to 375° F.
  2. Steam broccoli and cauliflower, covered, 5 minutes or until crisp-tender.
  3. Drain well; set aside.
  4. Combine breadcrumbs and next 5 ingredients; stir well, and set aside.
  5. Place flour in a small saucepan.
  6. Gradually add milk, stirring with a whisk until blended.
  7. Bring to a boil over med.-high heat, and cook 1 minute or until thick, stirring constantly.
  8. Remove from heat; add cheese, stirring until cheese melts.
  9. Combine veggies and cheese sauce, stirring well to coat.
  10. Spoon mixture into a quart baking dish coated with cooking spray.
  11. Sprinkle with breadcrumbs mixture.
  12. Bake for 25 minutes or until breadcrumbs are lightly browned.
  13. Let stand 5 minutes before serving.
