Asparagus with Orange Sauce

Ingredients:
2 lb
1/3 c
1 tsp
Dash
asparagus spears
frozen orange juice concentrate (thawed)
mayonnaise
Dijon-style mustard
pepper

Procedure:

Step1:  

  1. Wash asparagus spears.
  2. Break off woody bases and discard.
  3. Place asparagus in a steamer basket over simmering water.
  4. Cover and steam for 7 to 9 minutes (or until crisp-tender).
  5. Remove steamer basket and save 2 tablespoons of the steaming liquid.
Step 2:  
  1. In a small saucepan, whisk together the thawed orange juice concentrate, mayonnaise, mustard, and pepper until smooth.
  2. Stir in 1-2 tablespoons of the reserved liquid to make sauce the desired consistency.
  3. Cook and stir over low heat for 1 to 2 minutes until heated.
  4. Do not boil.
Step 3:  
  1. Arrange asparagus on a serving platter.
  2. Spoon sauce over spears.
Yields: 8 servings.
