Tortellini Salad

Ingredients:

refrigerated cheese-filled tortellini
washed fresh spinach, torn in pieces
green onions, sliced
medium ripe olives
small red bell pepper, chopped
frozen cooked salad shrimp, thawed
sour cream
mayo
Caesar dressing
salt
pepper
Procedure:
  1. Cook & drain tortellini.
  2. Rinse with cold water & drain.
  3. Place spinach in boiling water, cover and cook 1 minute & drain.
  4. Immediately rinse with cold water & drain.
  5. Place tortellini, spinach, onions, olives, bell pepper & shrimp in large glass or plastic bowl.
  6. Toss lightly.
  7. Mix remaining ingredients; toss with tortellini mixture.
  8. Cover and refrigerate at least 1 hr. to blend flavors, but no longer than 24 hrs.
