The Ladybugs' Recipes

Pasta Salad 2

Ingredients:
1 c
1/2 c + 1 T
2 T
1/2 tsp
3 cloves
1/4 c
1 lb
1 c
 
 
olive oil (extra virgin... if you have it)
cream (I have used ‘half and half’ and liked it better but...)
dried herbs (I use oregano, basil, and thyme - I do not care for rosemary)
Tabasco (I have never used this)
garlic put through a press **
FRESH lemon juice (don’t use that concentrated stuff)
‘bow-tie’ dry pasta (if you like using FRESH pasta, use up to 2 pounds)
freshly grated romano cheese
finely chopped parsley
freshly ground black pepper
Procedure:
  1. In a large bowl, whisk together olive oil and cream, herbs, tabasco, and garlic.
  2. When well mixed, whisk in lemon juice.
  3. Cook pasta until tender.
  4. Rinse immediately under cold water and drain.
  5. Add to olive oil mixture and gently toss until well coated.
  6. Add romano and toss again.
  7. Place in serving bowl and top with parsley and pepper.

** ( I LOVE garlic, but it doesn’t love me, so I use only half... in fact 1 and 1/2 cloves seems just right even with my ’garlicky’ friends )
