Frozen Waldorf Salad

Ingredients:
1/2 c
1/2 c
1/4 c
1/8 tsp
1 1/3 c

sugar
pineapple juice
fresh lemon juice
salt
heavy cream
miniature marshmallows
red seedless grapes cut in half
crushed pineapple, drained
medium apples, diced with skins left on
celery, diced
walnuts or pecans, roughly chopped
maraschino cherries (optional for garnish)
fresh mint leaves (optional for garnish)
Procedure:
  1. Combine sugar, pineapple juice, lemon juice and salt in saucepan.
  2. Cook over medium heat until thick.
  3. Let cool.
  4. Whip cream and fold into the cooled syrup mixture.
  5. Stir in marshmallows, fruits, nuts and celery.
  6. Spread in 8" x 8" pan
  7. Freeze until frozen throughly.
  8. Remove from freezer 5 minutes before serving.

Makes 8 squares.

I didn't put in mini marshmallows as we're not that fond of them. There's lots of fruit, nuts and celery so the whipped cream ends up being just enough to hold it all together.
