Marinade for Swordfish

Ingredients:
 
 
1/2 c
 
1 T
1/2 tsp
1/2 tsp
2 cloves
Juice of one orange, saving two thin orange slices for garnish
Grated zest of the above orange
chopped cilantro
Extra cilantro for garnish (optional)
olive oil
salt
white pepper (Black is fine, too.)
garlic, crushed

Procedure:

This recipe yields enough marinade for two servings of swordfish. Double or triple if you are preparing for a family of more than two OR if your marinade pan is quite large.

  1. Combine all of the above except for the garnishes.
  2. Put the fish in a marinade pan and pour the marinade over it.
  3. Turn it a few times to coat all sides evening.
  4. Marinate for 8 hours if possible but no less than 4. The longer the better.

Set your grill on high and cook on each side for about 5 minutes or until done. Doneness will depend a lot on the thickness of the swordfish steak.

I have a grill pan that sits on the grates of our gas grill. I spray it with PAM spray and cook the fish on that rather than put it directly on the grill grate.
