Blue Eyes Italian Chicken, Potato & Onion Dish

Ingredients:

chickens, cut up
Extra virgin olive oil
white onions, cut up
large potatoes, cut in quarters
oregano (fresh if possible)
parsley ntry Buttermilk Biscuits
grated Parmesan cheese
Procedure:
  1. Preheat oven to 350° F.
  2. Place about an inch of olive oil in a large baking pan.
  3. Wash chicken and place in pan.
  4. Cover with onion, some black pepper, and a little salt.
  5. Add potatoes, oregano and parsley and mix.
  6. Bake for 1 1/2 hrs.
  7. Turn the chicken once midway through.
Yields: 4 servings

I find fresh oregano is so much better than dried .. the flavor's much richer. (Sometimes I add green pepper).
