Mesa Verde Breakfast Burritos

Ingredients:
1/2 lb

1 can

hot pork sausage
small onion, chopped
(4oz) green chilies, diced
eggs
salt & pepper to taste
flour tortillas, at room temperature
Pepper Jack cheese, grated

Procedure:
Filling can be made a day ahead and chilled if you wish *

  1. In a large skillet, cook sausage, onion and chilies until meat is crumbled and browned.
  2. Drain.
  3. In a large bowl, beat eggs.
  4. Add salt and pepper.
  5. Pour eggs into meat mixture in skillet.
  6. Stir over heat until eggs are set to your taste.
