Baked Oatmeal

Ingredients:

2 c
1 1/2 tsp
1/2 tsp
1 c

1 c
1/2 c
quick cooking oats
baking powder
salt
milk
eggs, beaten
chunky or regular applesauce
brown sugar

Procedure:
  1. Preheat oven to 325° F
  2. In a large bowl combine the oatmeal, baking powder and salt.
  3. Mix in milk, eggs, applesauce, brown sugar.
  4. Stir and pour into a greased casserole dish.
  5. Bake for 45 minutes.
  6. Serve hot with your choice of toppings.

I like to bake this in small custard dishes, but it bakes quicker so baking time must be adjusted. Fill custard dishes only 2/3 full as mixture will rise a bit during baking. It is quite rich, so a small portion is sufficient if other foods are to be served.

Great company fare when served with your favorite combination of toppings.

Toppings:
    Dollop of Cool Whip or yogurt
    Raisins
    Sliced Bananas
    Maple Syrup
    Chopped walnuts or pecans
    Cinnamon Sugar
    Brown Sugar
