Raspberry Lemon Muffins

Ingredients:
2 c 
1 c
1 T
1/2 tsp

1 1/2 c
all-purpose flour
sugar
baking powder
salt if desired
eggs, lightly beaten
light cream
vegetable oil
lemon extract
fresh or frozen raspberries
Procedure:
  1. Preheat oven to 400° F.
  2. In large bowl, combine flour, sugar, baking powder and salt.
  3. Combine the eggs, cream, oil and lemon extract.
  4. Stir into dry ingredients just until moistened.
  5. Fold in raspberries.
  6. Spoon into 18 greased or paper-lined muffin cups.
  7. Bake for 18-20 minutes or until golden brown.
Yield: 1 1/2 dozen
