Apple-Cheddar Muffins

Ingredients:

vegetable shortening
sugar, divided use
large eggs
all-purpose flour
baking powder
baking soda
salt
quick cooking oats
shredded cheddar cheese
chopped pecans
apples (1 diced, 2 thinly sliced
milk
ground cinnamon
butter, melted
Procedure:
  1. Preheat oven to 375° F.
  2. In a large bowl cream together shortening and 1/2 cup of the sugar.
  3. Add eggs, one at a time, beating well after each addition. Set aside.
  4. Combine flour, baking powder, baking soda and salt; mix lightly.
  5. Gradually pour into shortening mixture; beating until blended.
  6. Stir in oats, cheese, pecans and the diced apple, mixing well after each addition.
  7. Gradually add milk, stirring until all the ingredients are just moistened.
  8. Grease 12 muffin tins and fill each two-thirds full of batter.
  9. In a shallow bowl combine remaining 1/4 cup sugar and cinnamon.
  10. Melt butter in a small saucepan over low heat; remove from heat.
  11. Dip apple slices into butter; and then into cinnamon/sugar mixture.
  12. Press an apple slice into the top of each muffin.
  13. Sprinkle with any remaining cinnamon/sugar.
  14. Bake for 25 minutes or until golden brown.

Yields: 1 dozen muffins.
