Tequila-Lime Chicken

Ingredients:

GOLD tequila
freshly squeezed lime juice (5 to 6 limes - there is NO substitute for freshly squeezed lime juice!)
freshly squeezed orange juice (about 2 oranges)
chili powder
minced jalapeno pepper (1 pepper, seeded)
minced fresh garlic (3 cloves)
kosher salt
freshly ground black pepper
chopped cilantro (optional)
boneless chicken breasts -- skin ON
Procedure:

1.  Combine EVERYTHING except the chicken breasts and mix well.
2.  Add the chicken breasts and marinate AT LEAST 24 hours.
3.  Heat grill and brush with oil to prevent the chicken from sticking.
4.  Remove the chicken breasts from the marinade and sprinkle well with salt and pepper.
5.  Grill, skin side down, for about 5 minutes, until nicely browned.
6.  Turn the chicken and cook for another 10 minutes, until just cooked through.
7.  Remove from the grill and put on a plate.
8.  Cover the breasts tightly and allow to rest for 5 minutes, then serve.

I like to serve the chicken with grilled red and yellow peppers and grilled onions. Delicious!
