Mexican Turkey Rolls

Ingredients:

18 thin slices
Mission® Fat Free Burrito Size Flour Tortillas
Honey Dijon Mustard
light Mayonnaise
low fat American Cheese
spinach, stems removed
tomato, thinly sliced
smoked turkey (about 6 ounces)
Procedure:

1.  Place two tortillas, side by side, on a work surface and overlap them 10%.
2.  Combine the mustard and mayonnaise in a small bowl and mix until well blended.
3.  Spread mixture over both tortillas.
4.  Place all of the sliced cheese on top of tortillas, leaving a 1 inch empty border at the top.
5.  Top with a layer of spinach, turkey and then tomatoes.
6.  Roll tortilla up jelly roll fashion, starting at the bottom.
7.  Cover tightly with plastic wrap and refrigerate for 20 minutes.
8.  Cut rolls into 12 slices just before serving.
