The Ladybugs' Recipes

Currant Jelly Cookies

Ingredients:
2 c
3/4 c
1 c
1/2 c
1 tsp
1/2 c
1/4 tsp
flour
confectioners sugar
butter (at room temperature) (Margarine isn’t as flavorful.)
finely chopped walnut
pure vanilla extract
finely chopped nuts (for rolling)
currant jelly (or your favorite jelly, jam, or preserves)
Procedure:

1.  Preheat oven to 325ºF.
2.  Whisk together flour and confectioners sugar.
3.  With a pastry blender or two knives cut in the butter.
4.  Stir in the finely chopped walnuts.
5.  Sprinkle the mixture with vanilla extract.
6.  Knead the dough until smooth.
7.  If too warm and soft, chill for an hour or so.
8.  Shape into walnut-sized balls.
9.  Roll in an additional finely chopped nuts.
10.  Place on a greased cookie sheet.
11.  Indent with one of your fingers, making a small well.
12.  Fill each well with jelly.
13.  Bake for fifteen to eighteen minutes.
14.  Cool slightly on the cookie sheet.
15.  Remove to a wire rack to cool completely.

Store at room temperature in an airtight container OR wrap well in foil and freeze in single layers.
