The Ladybugs' Recipes

Fresh Berry Pie

Ingredients:
 
1 c
5 T
1/2 - 3/4 tsp
1/4 tsp
4 c
2 T
pastry for a "2-crust" pie (home made or store-bought)
sugar (if berries are very ripe, you won't need this much sugar)
all-purpose flour
cinnamon
salt
fresh berries
butter or stick margarine
Procedure:

1.  Preheat oven to 400ºF.
2.  Bake the bottom crust for about 7 or 8 minutes, or just until it is slightly done and no longer "dough-y."
3.  Mix together the sugar, flour, cinnamon, and salt, and carefully blend through the berries.
4.  Pour into pastry-lined pie plate.
5.  Dot with butter or margarine.
6.  Add top crust and seal.
7.  Make slits in top to release steam.
8.  Bake for 30 - 45 minutes, you just have to keep an eye on it. When it is a light golden brown, it is done.

Keep an eye on it as it is cooking, because it will sometimes bubble out of the steam holes and into your oven, and what a mess! If this starts to happen, I always put a sheet of foil on the lower rack of my oven to catch the drippings.
